Regarding the shape — the walnut baklava (cevizli) is made in a square tray, which is why it's cut into rectangular pieces. This is actually the traditional presentation for this style of baklava. Our classic Antep-style baklava, on the other hand, is made in a round tray and cut into the diamond shape you're familiar with. Both are authentic presentations, just different regional traditions!
